100% Gyokuro · Shade-grown · Uji, Kyoto

+ Tea: 100% Japanese gyokuro, whole loose leaf, no flavourings, sugar or additives

+ Region: Uji, Kyoto, Japan

+ Growing: shade-grown for about three weeks before harvest

+ Testing: EU lab-tested for pesticide residues

+ Net weight: 100 g, makes up to about 18 liters of cold brew (around €2.30 per liter)

+ Ingredients: 100% Japanese green tea (gyokuro)

Preparation

5–6 g · 1 liter · 6–8 hours

  1. Add 5–6 g of tea to 1 liter of cold water.
  2. Refrigerate for 6–8 hours, or leave overnight.
  3. Strain and chill well.

Use a little less tea or a shorter time for a lighter brew, and a little more for greater intensity. Drink it straight from the fridge first, then experiment: over large ice cubes, topped with sparkling water, or in a wine glass as an alcohol-free drink for aperitif hour.

Good to know

Can I brew it hot? Yes. It is genuine Japanese gyokuro. Use water at 50–60 °C, a smaller volume and a shorter steeping time.

Does it contain caffeine? Yes. Gyokuro is naturally high in caffeine. Cold water extracts it more slowly, but the amount in your brew depends on the tea, the water temperature and the time.

Storage. Store in a cool, dry place.

Why gyokuro for cold brew

Shading the plants for several weeks before harvest creates a different balance of flavour: more umami and natural sweetness, with less sharp astringency. Cold water extracts the tea slowly and gently, so the amino acids behind gyokuro's umami come forward and the bitter compounds stay back.
